Beginning in 2006, the agriculture departments of several large states-with backing from the U.S. Food and Drug Administration-launched a major crackdown on small dairies producing raw milk. Replete with undercover agents, sting operations, surprise raids, questionable test-lab results, mysterious illnesses, propaganda blitzes, and grand jury investigations, the crackdown was designed to disrupt the supply of unpasteurized milk to growing legions of consumers demanding healthier and more flavorful food.

The Raw Milk Revolution takes readers behind the scenes of the government's tough and occasionally brutal intimidation tactics, as seen through the eyes of milk producers, government regulators, scientists, prosecutors, and consumers. It is a disturbing story involving marginally legal police tactics and investigation techniques, with young children used as political pawns in a highly charged atmosphere of fear and retribution.

Are regulators' claims that raw milk poses a public health threat legitimate? That turns out to be a matter of considerable debate. In assessing the threat, The Raw Milk Revolution reveals that the government's campaign, ostensibly designed to protect consumers from pathogens like salmonella, E. coli 0157:H7, and listeria, was based in a number of cases on suspect laboratory findings and illnesses attributed to raw milk that could well have had other causes, including, in some cases, pasteurized milk.

David Gumpert dares to ask whether regulators have the public's interest in mind or the economic interests of dairy conglomerates. He assesses how the government's anti-raw-milk campaign fits into a troublesome pattern of expanding government efforts to sanitize the food supply-even in the face of ever-increasing rates of chronic disease like asthma, diabetes, and allergies. The Raw Milk Revolution provides an unsettling view of the future, in which nutritionally dense foods may be available largely through underground channels.

REVIEWS AND PRAISE

"David Gumpert has chronicled the Raw Milk War with insight and humor. He provides an important record of systematic government bias against Nature's perfect food. Must reading for raw milk fans and government officials alike."--Sally Fallon Morell, President, The Weston A. Price Foundation

"David Gumpert has become the official chronicler of the 'raw milk movement' in the United States. The Raw Milk Revolution is a highly readable expose that successfully captures how the controversy over raw milk is at the center of a larger battle between the industrial food system and the local food movement. Gumpert explains how raw milk, more than any other food, threatens proponents of the 'germ theory,' centralized food production, and the 'nanny state.' The Raw Milk Revolution is an extremely important book because it sounds a clear warning that upholding the right to produce and consume raw milk is critical in preserving our food freedoms in general."--Peter Kennedy, President, Farm-to-Consumer Legal Defense Fund

"David Gumpert employs his expertise as a professional business writer to dig deep and wide into the exploding raw milk controversy. His compelling analysis of the science, economics, politics and history of 'nature's most perfect food' opens the door to a greater understanding of the major challenges facing our food and agriculture systems today. Anyone concerned with the health of our people, our environment and our democracy should heed his words."--Dean Florez, Majority Leader, California State Senate

"If you want to understand the vocal opposition to food safety laws, you should read Gumpert's book. That's not the only reason to read it though. Even if you have little interest in raw milk, I think this book is a key piece in the puzzle to understanding the backwards priorities in America's food safety system."--Jill Richardson, La Vida Locavore review

"In this fascinating book on raw milk, journalist David Gumpert delves into the messy politics of food safety, which pits government technocrats and prosecutors against farmers, consumers and their advocates. It's a compelling account, one that should be read by any raw milk devotee--and more importantly, by anyone concerned about the broken and arbitrary way the government regulates the food we eat."--Samuel Fromartz, author of Organic Inc: Natural Foods and How They Grew

"The raw milk underground is one of the most contentious battlefields in the revolution to reclaim our food from industrialization, over-processing, and corporate control. In this book, David Gumpert investigates in great detail the health claims of both raw milk advocates and public health officials, as well the legal tactics being employed by government agencies to stop the growing movement to obtain and supply raw milk. His comprehensive analysis effectively deconstructs and illuminates the many complex issues of health, safety, and freedom that are raised by this debate."--Sandor Ellix Katz, author of Wild Fermentation: The Flavor, Nutrition, and Craft of Live-Culture Foods and The Revolution Will Not Be Microwaved: Inside America's Underground Food Movements

Family Friendly Farming

Family Friendly Farming

By Joel Salatin

Saving the landscape, rebuilding entrepreneurial rural families, and protecting nutritious food are the themes of this timeless treatise-hence the word "testament." Delving into the soul of the Salatin family's nationally acclaimed Polyface Farm, author Joel Salatin offers Family Friendly Farming as the key to dealing with resource issues, food policy, and social fabric.

With humor and personal stories, he opens his family and farm convictions for all to see, share, and enjoy. Written from his unabashed "Christian libertarian environmentalist capitalist" perspective, his ideas are guaranteed to encourage and challenge virtually every "ism" in the culture. It will captivate anyone passionate about healing the land, healing families, and healing the food supply.

For several decades young people have been leaving the family farm. The ones left behind are now responsible for society's greatest resources: clean land and clean food. Anyone dedicated to preserving these resources will find in these pages a nongovernmental, self-empowerment approach to environmentalism and food safety.

The heart of this book is aimed toward parents tired of their Dilbert cubicle at the end of the expressway who want to reconnect with their children through a pastoral lifestyle. It's written for anyone who yearns to grow old working with and being adored by value-sharing grandchildren and honored by passionate, productive adult children. Family Friendly Farming can make any family business more viable and any family more functional.

The ten-chapter section on how to get the kids to love the farm is an invaluable addition to any collection of child-rearing manuals. Salatin moves from the family team-building section into a practical discussion on how to increase income per acre and create new, white-collar salaries without buying more land, equipment, or buildings. He deals with the unique and thorny issues surrounding any family business by using his own multi-generational family farm experience as his base for insight and wisdom.

Everything I Want To Do Is Illegal

Everything I Want To Do Is Illegal

By Joel Salatin

Drawing upon 40 years' experience as an ecological farmer and marketer, Joel Salatin explains with humor and passion why Americans do not have the freedom to choose the food they purchase and eat. From child labor regulations to food inspection, bureaucrats provide themselves sole discretion over what food is available in the local marketplace. Their system favors industrial, global corporate food systems and discourages community-based food commerce, resulting in homogenized selection, mediocre quality, and exposure to non-organic farming practices. Salatin's expert insight explains why local food is expensive and difficult to find and will illuminate for the reader a deeper understanding of the industrial food complex.

You Can Farm

You Can Farm

By Joel Salatin

Have you ever desired, deep within your soul, to make a comfortable full-time living from a farming enterprise? Too often people dare not even vocalize this desire because it seems absurd. It's like thinking the unthinkable.

After all, the farm population is dwindling. It takes too much capital to start. The pay is too low. The working conditions are dusty, smelly and noisy: not the place to raise a family. This is all true, and more, for most farmers.

But for farm entrepreneurs, the opportunities for a farm family business have never been greater. The aging farm population is creating cavernous niches begging to be filled by creative visionaries who will go in dynamic new directions. As the industrial agriculture complex crumbles and our culture clambers for clean food, the countryside beckons anew with profitable farming opportunities.

While this book can be helpful to all farmers, it targets the wannabes, the folks who actually entertain notions of living, loving and learning on a piece of land. Anyone willing to dance with such a dream should be able to assess its assets and liabilities; its fantasies and realities. "Is it really possible for me?" is the burning question this book addresses.

The Sheer Ecstasy of Being a Lunatic Farmer

The Sheer Ecstasy of Being a Lunatic Farmer

By Joel Salatin

Foodies and environmentally minded folks often struggle to understand and articulate the fundamental differences between the farming and food systems they endorse and those promoted by Monsanto and friends. With visceral stories and humor from Salatin's half-century as a "lunatic" farmer, Salatin contrasts the differences on many levels: practical, spiritual, social, economic, ecological, political, and nutritional.

In today's conventional food-production paradigm, any farm that is open-sourced, compost-fertilized, pasture-based, portably-infrastructured, solar-driven, multi-speciated, heavily peopled, and soil-building must be operated by a lunatic. Modern, normal, reasonable farmers erect "No Trespassing" signs, deplete soil, worship annuals, apply petroleum-based chemicals, produce only one commodity, erect Concentrated Animal Feeding Operations, and discourage young people from farming.

Anyone looking for ammunition to defend a more localized, solar-driven, diversified food system will find an entire arsenal in these pages. With wit and humor honed during countless hours working on the farm he loves, and then interacting with conventional naysayers, Salatin brings the land to life, farming to sacredness, and food to ministry.

Divided into four main sections, the first deals with principles to nurture the earth, an idea mainline farming has never really endorsed. The second section describes food and fiber production, including the notion that most farmers don't care about nutrient density or taste because all they want is shipability and volume. The third section, titled "Respect for Life," presents an apologetic for food sacredness and farming as a healing ministry. Only lunatics would want less machinery and pathogenicity. Oh, the ecstasy of not using drugs or paying bankers. How sad. The final section deals with promoting community, including the notion that more farmers would be a good thing.

Mastering Stocks and Broths

Mastering Stocks and Broths

By Rachael Mamane

Stocks and broths are the foundation of good cooking, yet information on their use is often relegated to the introductions or appendices of cookbooks. Until now there has not been a comprehensive culinary guide to stocks in the canon, save for snippets here and there. Hard to believe, since most passionate home cooks and professional chefs know that using stocks and broths—both on their own and as the base for a recipe—can turn a moderately flavorful dish into a masterpiece. Mastering Stocks and Broths is the comprehensive guide to culinary stocks and broths that passionate home cooks and innovative chefs have all been waiting for.

Rachael Mamane, a self-taught cook and owner of small-scale broth company Brooklyn Bouillon, is reminiscent of M. F. K. Fisher, Patience Gray, and Julia Child. She takes us on a culinary journey into the science behind fundamental stocks and the truth about well-crafted bone broths, and offers over 100 complex and unique recipes incorporating stocks as foundational ingredients. Mastering Stocks and Broths includes a historical culinary narrative about stocks in the classic French technique as well as through the lens of other cultures around the world. Readers will learn about the importance of quality sourcing, the practical and health benefits of stocks and broths, and detailed methodology on how to develop, store, and use them in a home kitchen.

The recipes place a playful emphasis on the value of zero waste, turning spent bones, produce seconds, and leftover animal fats into practical products to use around the home. Readers will turn to this book when they find themselves wondering what to do with the carcass of a store-bought roast chicken and they want to learn how to make every inch of their vegetables go further.

Perhaps most important to remember: a good stock takes time. This is part of the pleasure—making stocks is meditative and meaningful, if you allow yourself the occasion. Building a stock often happens in the background of most kitchens—a smell that permeates a residence, a gentle warmth that radiates from the kitchen. Readers will be inspired by Mamane’s approach to truly slow cookery and her effervescent love for food itself.

The World According to Monsanto (DVD)

The World According to Monsanto (DVD)

By Marie-Monique Robin

Monsanto's controversial past combines some of the most toxic products ever sold with misleading reports, pressure tactics, collusion, and attempted corruption. They now race to genetically engineer (and patent) the world's food supply, which profoundly threatens our health, environment, and economy. Combining secret documents with first-hand accounts by victims, scientists, and politicians, this widely praised film exposes why Monsanto has become the world's poster child for malignant corporate influence in government and technology.

Also on the DVD:
Your Milk on Drugs—Just Say No!, A film by Jeffrey M. Smith

Dairy products from cows treated with Monsanto's genetically engineered bovine growth hormone (rBGH or rBST) may sharply increase cancer risk and other diseases, especially in children. Already banned in most industrialized nations, it was approved in the U.S. on the backs of fired whistleblowers, manipulated research, and a corporate takeover at the FDA. This must-see film includes footage prepared for a Fox TV station—canceled after a letter from Monsanto's attorney threatened "dire consequences."

Bonus CD:
"Don't Put That in Your Mouth," a speech by Jeffrey M. Smith

You'll want to stop eating genetically modified foods after you learn how they're linked to toxic and allergic reactions; sick, sterile, and dead livestock; and damage to virtually every organ studied in lab animals.

GAPS also refers to chronic gut-related physical conditions, including celiac disease, rheumatoid arthritis, diabetes type one, and Crohn’s disease, as well as asthma, eczema, allergies, thyroid disorders, and more. An evolution of the Specific Carbohydrate Diet, the GAPS Diet will appeal to followers of the Paleo Diet, who are still struggling for optimum health, as well as anyone interested in the health benefits of fermentation or the Weston A. In The Heal Your Gut Cookbook, readers will learn about the key cooking techniques and ingredients that form the backbone of the GAPS Diet: working with stocks and broths, soaking nuts and seeds, using coconut, and culturing raw dairy. The authors offer encouraging, real-life perspectives on the life-changing improvements to the health of their families by following this challenging, but powerful, diet.

The GAPS Diet is designed to restore the balance between beneficial and pathogenic intestinal bacteria and seal the gut through the elimination of grains, processed foods, and refined sugars and the carefully sequenced reintroduction of nutrient-dense foods, including bone broths, raw cultured dairy, certain fermented vegetables, organic pastured eggs, organ meats, and more.
