Cancer survivors Domini Kemp and Patricia Daly offer the first comprehensive ketogenic cookbook based on the most exciting new research on nutritional approaches to the prevention and management of cancer.

For decades, the ketogenic diet—which shifts the body’s metabolism from burning glucose to burning fat, lowering blood sugar and insulin and resulting in a metabolic state known as ketosis—has been used to successfully manage pediatric epilepsy. More recently, it has been used by the Paleo community as a weight loss strategy. Now emerging research suggests that a ketogenic diet, in conjunction with conventional treatments, also offers new hope for those coping with cancer and other serious disease.

With endorsements from leading researchers and oncologists such as Dr. Thomas Seyfried (Cancer as a Metabolic Disease), The Ketogenic Kitchen offers more than 250 recipes, as well as meal plans and comprehensive scientific information about the benefits of a ketogenic diet, with sensible advice to help readers through periods of illness, recovery, and treatment.

This North American paperback edition has been updated to include U.S. customary units of measure appearing side-by-side with metric measures.

REVIEWS AND PRAISE

"Thank you so much for providing such an excellent resource. I’m sure it is going to help many, and I couldn’t recommend it more hardily. Do not get this book unless you want to get healthy.”--Dr. Joseph Mercola, founder and director, Mercola.com

“The ketogenic diet can often be overwhelming. In The Ketogenic Kitchen, Kemp and Daly provide clear explanations and fantastic recipes delivered in a passionate and personal writing style. This book removes the difficulties and makes the integration of the ketogenic diet into one’s life a rich and enjoyable process.”--Travis Christofferson, author of Tripping Over the Truth; founder and president, Single Cause Single Cure Foundation

The Ketogenic Kitchen has quickly become my favorite resource for people with cancer who are transitioning to a ketogenic plan. This book is a neat package complete with meal plans, recipes, and nutrition info. The helpful advice and personal stories are a real bonus!”--Miriam Kalamian, EdM, MS, CNS, www.dietarytherapies.com

“I awaited the release of The Ketogenic Kitchen with child-like anticipation, and it has not let me down. It is a toolbox ‘must’ for all my patients—to support and inspire them with the beautiful and delicious recipes that fill the pages. There are plenty of folks claiming to have written ketogenic cookbooks, many filled with underwhelming recipes and ‘fake food’ ingredients. The Ketogenic Kitchen focuses on real food, something harder to come by these days, as well as creative menu ideas. If you are looking to round out your cookbook collection, ketogenic or not, this book offers something for everyone.”--Dr. Nasha Winters, ND, LAc, FABNO

“There are many ‘keto’ cookbooks out there, but The Ketogenic Kitchen was specifically created for cancer patients by two people who have fought off cancer themselves. Many of the recipes were written to support the very low carbohydrate limits, which lower blood sugar and raise ketone levels quickly, an important goal for those diagnosed with cancer. This book will help so many patients and medical professionals learn how to implement the diet correctly, and it should be a standard in every oncology ward.”--Ellen Davis, MS, www.ketogenic-diet-resource.com

“Public interest in ketogenic diets for the treatment of cancer and other challenging health conditions is growing rapidly—much faster, in fact, than the availability of high quality resources people can use to apply these valuable dietary principles to their daily lives. That is precisely what makes The Ketogenic Kitchen such a timely treasure.

“Patricia Daly and Domini Kemp have written an authoritative guide that will help you put the powerful science of ketogenic principles to work in your daily life. Their hard-earned wisdom coupled with their culinary expertise set this book apart from other health-oriented cookbooks. For issues ranging from mental health disorders to diabetes to cancer, The Ketogenic Kitchen will be indispensable to those seeking to incorporate a powerful, science-based nutritional approach into their comprehensive treatment plan.”--Georgia Ede, MD, Psychiatrist and Nutrition Consultant, www.diagnosisdiet.com

The Ketogenic Kitchen is a wonderful, practical resource for the person who wants to improve their health by shifting to ketone-based metabolism. This is the cookbook that my clients and I have been waiting for!”--Dr. Mark Atkinson, MBBS, Mind–Body Medicine Physician, Cancer Recovery Advisor and Developer of the Cancer Recovery by Design Programme, www.drmarkatkinson.com

Public interest is increasing but clinical trials exploring the effect of lower-carbohydrate or ketogenic diets are slow to get off the ground, and clinical support, experience and understanding can be frustratingly hard to come by. Patricia and Domini’s book explains the precautions, the practicalities, the theories and the uncertainties and will be of value to individuals, their families and the clinicians supporting their treatment pathway. Thank you, Patricia and Domini, for your considerable endeavours in creating such an informative and deliciously practical book.”--Sue Wood, Specialist Ketogenic Dietician, Matthew’s Friends Clinics, UK

“Based on a plethora of preclinical data, trials are underway from the US to Germany. The benefits of a ketogenic diet have already been shown for weight loss and metabolic improvement, and we are hopeful that similar benefits will be seen in the cancer world. While the diet has been shown to synergise with standard therapies like radiation therapy in preclinical studies, recent studies are underway to test this in humans.

 “Unable to wait for these results, many have chosen to engage in a ketogenic diet during their cancer treatment. It is our job to make sure this is done safely and effectively, and The Ketogenic Kitchen is a vital resource that we have been lacking in the clinic. This is a great source of information for both patient and physician, helping to ensure that the diet is done safely with a variety of healthy, delicious and nutrient-dense foods.”--Dr. Colin E. Champ, Assistant Professor, Pittsburgh Cancer Institute, Radiation Oncologist, University of Pittsburgh Medical Center, Author of Misguided Medicine, www.cavemandoctor.com

The Ketogenic Kitchen will be an invaluable resource for those wanting to follow a ketogenic diet under the direction of their medical professionals, and it will be an equally useful resource for medical professionals who want to add this to their patients’ therapeutic regime.”--Adrienne C. Scheck, PhD, Associate Professor, Neuro-Oncology Research, Barrow Brain Tumor Research Center, Barrow Neurological Institute Phoenix, AZ

That book tells us why; now in this down-to-earth, highly practical dietary guide, Sarah and Craig tell us how.

Chasing Chiles

Chasing Chiles

By Gary Paul Nabhan and Kraig Kraft and Kurt Michael Friese

Chasing Chiles looks at both the future of place-based foods and the effects of climate change on agriculture through the lens of the chile pepper-from the farmers who cultivate this iconic crop to the cuisines and cultural traditions in which peppers play a huge role.

Why chile peppers? Both a spice and a vegetable, chile peppers have captivated imaginations and taste buds for thousands of years. Native to Mesoamerica and the New World, chiles are currently grown on every continent, since their relatively recent introduction to Europe (in the early 1500s via Christopher Columbus). Chiles are delicious, dynamic, and very diverse-they have been rapidly adopted, adapted, and assimilated into numerous world cuisines, and while malleable to a degree, certain heirloom varieties are deeply tied to place and culture-but now accelerating climate change may be scrambling their terroir.

Over a year-long journey, three pepper-loving gastronauts-an agroecologist, a chef, and an ethnobotanist-set out to find the real stories of America's rarest heirloom chile varieties, and learn about the changing climate from farmers and other people who live by the pepper, and who, lately, have been adapting to shifting growing conditions and weather patterns. They put a face on an issue that has been made far too abstract for our own good.

Chasing Chiles is not your archetypal book about climate change, with facts and computer models delivered by a distant narrator. On the contrary, these three dedicated chileheads look and listen, sit down to eat, and get stories and recipes from on the ground-in farmers' fields, local cafes, and the desert-scrub hillsides across North America. From the Sonoran Desert to Santa Fe and St. Augustine (the two oldest cities in the U.S.), from the marshes of Avery Island in Cajun Louisiana to the thin limestone soils of the Yucatan, this book looks at how and why climate change will continue to affect our palates and our producers, and how it already has.

Home Baked

Home Baked

By Hanne Risgaard

Recipes and techniques for baking artisan bread using organic stone-milled flour, organic yeasts, sourdoughs, and more from renowned Danish organic farm and family-owned mill, Skærtoft Mølle-literally translated as "Cut-Road Mill"-situated on Als, an idyllic island in the southeast of Denmark.

Hanne Risgaard offers recipes for unique bread and pastry that bring a Nordic approach to bread baking that feels worlds away from most conventional baking books. At Skærtoft, there is a belief in organic, small-scale-produced whole grains, traditional stone-ground milling techniques, use of wild fermented sourdough, organic yeast, and attention to terroir. Their farm produces some of the highest-quality, nutrient-rich grain available. In fact, Copenhagen's celebrated restaurant NOMA, recently accorded a "World's Best Restaurant" award, uses Skærtoft Mølle products. Indeed, the growing movement of Nordic cuisine centers on its devotion to high-quality regional produce, the creativity of the chef, and a sound awareness of the workings of nature. This set of principles also serves to guide Hanne Risgaard in Home Baked.

Risgaard offers practical information not only on the concepts and processes behind creating delicious Scandinavian breads, but also concise growing and cultivation information about the grains themselves, as well as a guide to basic equipment and kitchen set-up, ingredients, and the history of Skærtoft and their philosophy. At the beginning of each recipe there is a brief story contextualizing where the recipe comes from. Their world comes alive!

Home Baked includes detailed sections on: baking with yeast; sourdoughs; baking without a raising agent (pies, cakes, cookies, crackers); and covers grains such as wheat, spelt, barley, and rye. The breads include unique ingredients like foraged herbs and greens, such as the Cocotte with Ramsons (either put directly in the bread dough or preserved in a syrup of pearls of rye and sea buckthorn berries); as well as other interesting standouts like the Buns for Tilters (with apple and yogurt, prepared for the annual horse games), Green Knots (made with stinging nettle, in honor of the fight to save the nettle in France), Rosemary Sourdough, Elderflower Muffins, and more.Perfectly timed for the growing interest in Scandinavian, and particularly Danish, cuisine, Home Baked is a must-have for the bread lover's library.

The Small-Scale Cheese Business

The Small-Scale Cheese Business

By Gianaclis Caldwell

There has never been a better time to be making and selling great cheese. People worldwide are consuming more high-quality, handmade cheese than ever before. The number of artisan cheesemakers has doubled in recent years, and many of the industry’s newcomers are “farmstead” producers–those who work only with the milk of their own animals. Today, more than ever before, the people who choose to become farmer-cheesemakers need access to the knowledge of established cheese artisans who can help them build their dream.

Few career choices lead to such extremes of labor, emotion, and monetary challenge. In The Small-Scale Cheese Business (originally published in 2010 as The Farmstead Creamery Advisor), respected cheesemaker, instructor, and speaker Gianaclis Caldwell walks would-be producers through the many, and often confusing, steps and decisions they will face when considering a career in this burgeoning cottage industry. This book fills the gap that exists between the pasture and cheese plate. It goes far beyond issues of caring for livestock and basic cheesemaking, explaining business issues such as:

    * Analyzing your suitability for the career;
    * Designing and building the cheese facility;
    * Sizing up the market;
    * Negotiating day-to-day obstacles;
    * Ensuring maximum safety and efficiency.

Drawing from her own and other cheesemakers’ experiences, Caldwell brings to life the story of creating a successful cheesemaking business in a practical, organized manner. Absolutely essential for anyone interested in becoming a licensed artisan cheesemaker, The Small-Scale Cheese Business will also appeal to the many small and hobby-farm owners who already have milking animals and who wish to improve their home dairy practices and facilities.
