Cancer survivors Domini Kemp and Patricia Daly offer the first comprehensive ketogenic cookbook based on the most exciting new research on nutritional approaches to the prevention and management of cancer.

For decades, the ketogenic diet—which shifts the body’s metabolism from burning glucose to burning fat, lowering blood sugar and insulin and resulting in a metabolic state known as ketosis—has been used to successfully manage pediatric epilepsy. More recently, it has been used by the Paleo community as a weight loss strategy. Now emerging research suggests that a ketogenic diet, in conjunction with conventional treatments, also offers new hope for those coping with cancer and other serious disease.

With endorsements from leading researchers and oncologists such as Dr. Thomas Seyfried (Cancer as a Metabolic Disease), The Ketogenic Kitchen offers more than 250 recipes, as well as meal plans and comprehensive scientific information about the benefits of a ketogenic diet, with sensible advice to help readers through periods of illness, recovery, and treatment.

This North American paperback edition has been updated to include U.S. customary units of measure appearing side-by-side with metric measures.

REVIEWS AND PRAISE

"Thank you so much for providing such an excellent resource. I’m sure it is going to help many, and I couldn’t recommend it more hardily. Do not get this book unless you want to get healthy.”--Dr. Joseph Mercola, founder and director, Mercola.com

“The ketogenic diet can often be overwhelming. In The Ketogenic Kitchen, Kemp and Daly provide clear explanations and fantastic recipes delivered in a passionate and personal writing style. This book removes the difficulties and makes the integration of the ketogenic diet into one’s life a rich and enjoyable process.”--Travis Christofferson, author of Tripping Over the Truth; founder and president, Single Cause Single Cure Foundation

The Ketogenic Kitchen has quickly become my favorite resource for people with cancer who are transitioning to a ketogenic plan. This book is a neat package complete with meal plans, recipes, and nutrition info. The helpful advice and personal stories are a real bonus!”--Miriam Kalamian, EdM, MS, CNS, www.dietarytherapies.com

“I awaited the release of The Ketogenic Kitchen with child-like anticipation, and it has not let me down. It is a toolbox ‘must’ for all my patients—to support and inspire them with the beautiful and delicious recipes that fill the pages. There are plenty of folks claiming to have written ketogenic cookbooks, many filled with underwhelming recipes and ‘fake food’ ingredients. The Ketogenic Kitchen focuses on real food, something harder to come by these days, as well as creative menu ideas. If you are looking to round out your cookbook collection, ketogenic or not, this book offers something for everyone.”--Dr. Nasha Winters, ND, LAc, FABNO

“There are many ‘keto’ cookbooks out there, but The Ketogenic Kitchen was specifically created for cancer patients by two people who have fought off cancer themselves. Many of the recipes were written to support the very low carbohydrate limits, which lower blood sugar and raise ketone levels quickly, an important goal for those diagnosed with cancer. This book will help so many patients and medical professionals learn how to implement the diet correctly, and it should be a standard in every oncology ward.”--Ellen Davis, MS, www.ketogenic-diet-resource.com

“Public interest in ketogenic diets for the treatment of cancer and other challenging health conditions is growing rapidly—much faster, in fact, than the availability of high quality resources people can use to apply these valuable dietary principles to their daily lives. That is precisely what makes The Ketogenic Kitchen such a timely treasure.

“Patricia Daly and Domini Kemp have written an authoritative guide that will help you put the powerful science of ketogenic principles to work in your daily life. Their hard-earned wisdom coupled with their culinary expertise set this book apart from other health-oriented cookbooks. For issues ranging from mental health disorders to diabetes to cancer, The Ketogenic Kitchen will be indispensable to those seeking to incorporate a powerful, science-based nutritional approach into their comprehensive treatment plan.”--Georgia Ede, MD, Psychiatrist and Nutrition Consultant, www.diagnosisdiet.com

The Ketogenic Kitchen is a wonderful, practical resource for the person who wants to improve their health by shifting to ketone-based metabolism. This is the cookbook that my clients and I have been waiting for!”--Dr. Mark Atkinson, MBBS, Mind–Body Medicine Physician, Cancer Recovery Advisor and Developer of the Cancer Recovery by Design Programme, www.drmarkatkinson.com

Public interest is increasing but clinical trials exploring the effect of lower-carbohydrate or ketogenic diets are slow to get off the ground, and clinical support, experience and understanding can be frustratingly hard to come by. Patricia and Domini’s book explains the precautions, the practicalities, the theories and the uncertainties and will be of value to individuals, their families and the clinicians supporting their treatment pathway. Thank you, Patricia and Domini, for your considerable endeavours in creating such an informative and deliciously practical book.”--Sue Wood, Specialist Ketogenic Dietician, Matthew’s Friends Clinics, UK

“Based on a plethora of preclinical data, trials are underway from the US to Germany. The benefits of a ketogenic diet have already been shown for weight loss and metabolic improvement, and we are hopeful that similar benefits will be seen in the cancer world. While the diet has been shown to synergise with standard therapies like radiation therapy in preclinical studies, recent studies are underway to test this in humans.

“Unable to wait for these results, many have chosen to engage in a ketogenic diet during their cancer treatment. It is our job to make sure this is done safely and effectively, and The Ketogenic Kitchen is a vital resource that we have been lacking in the clinic. This is a great source of information for both patient and physician, helping to ensure that the diet is done safely with a variety of healthy, delicious and nutrient-dense foods.”--Dr. Colin E. Champ, Assistant Professor, Pittsburgh Cancer Institute, Radiation Oncologist, University of Pittsburgh Medical Center, Author of Misguided Medicine, www.cavemandoctor.com

The Ketogenic Kitchen will be an invaluable resource for those wanting to follow a ketogenic diet under the direction of their medical professionals, and it will be an equally useful resource for medical professionals who want to add this to their patients’ therapeutic regime.”--Adrienne C. Scheck, PhD, Associate Professor, Neuro-Oncology Research, Barrow Brain Tumor Research Center, Barrow Neurological Institute Phoenix, AZ

Altered Genes, Twisted Truth

Altered Genes, Twisted Truth

By Steven Druker

This book uncovers the biggest scientific fraud of our age. It tells the fascinating and frequently astounding story of how the massive enterprise to restructure the genetic core of the world's food supply came into being, how it advanced by consistently violating the protocols of science, and how for more than three decades, hundreds of eminent biologists and esteemed institutions have systematically contorted the truth in order to conceal the unique risks of its products–and get them onto our dinner plates.

Altered Genes, Twisted Truth provides a graphic account of how this elaborate fraud was crafted and how it not only deceived the general public, but Bill Clinton, Bill Gates, Barack Obama and a host of other astute and influential individuals as well. The book also exposes how the U.S. Food and Drug Administration (FDA) was induced to become a key accomplice--and how it has broken the law and repeatedly lied in order to usher genetically engineered foods onto the market without the safety testing that's required by federal statute. As a result, for fifteen years America's families have been regularly ingesting a group of novel products that the FDA's own scientific staff had previously determined to be unduly hazardous to human health.

By the time this gripping story comes to a close, it will be clear that the degradation of science it documents has not only been unsavory but unprecedented--and that in no other instance have so many scientists so seriously subverted the standards they were trained to uphold, misled so many people, and imposed such magnitude of risk on both human health and the health of the environment.

An Unlikely Vineyard

An Unlikely Vineyard

By Deirdre Heekin

Named one of the Best Wine Books of 2014 by The New York Times, An Unlikely Vineyard tells the evolutionary story of Deirdre Heekin’s farm from overgrown fields to a fertile, productive, and beautiful landscape that melds with its natural environment.

Is it possible to capture landscape in a bottle? To express its terroir, its essence of place—geology, geography, climate, and soil—as well as the skill of the winegrower?

That’s what Heekin and her chef/husband, Caleb Barber, set out to accomplish on their tiny, eight-acre hillside farm and vineyard in Vermont.

But An Unlikely Vineyard involves much more. It also presents, through the example of their farming journey and winegrowing endeavors, an impressive amount of information on how to think about almost every aspect of gardening: from composting to trellising; from cider and perry making to growing old garden roses, keeping bees, and raising livestock; from pruning (or not) to dealing naturally with pests and diseases. As Eric Asimov, chief wine critic for The New York Times, writes, “I love this book, which conveys beautifully why the best wine is, at heart, an agricultural expression.”

Challenged by cold winters, wet summers, and other factors, Deirdre and Caleb set about to grow not only a vineyard, but an orchard of heirloom apples, pears, and plums, as well as gardens filled with vegetables, herbs, roses, and wildflowers destined for their own table and for the kitchen of their small restaurant. They wanted to create, or rediscover, a sense of place, and to grow food naturally using the philosophy and techniques gleaned from organic gardening, permaculture, and biodynamic farming.

Accompanied throughout by lush photos, this gentle narrative will appeal to anyone who loves food, farms, and living well.

Organic Mushroom Farming and Mycoremediation

Organic Mushroom Farming and Mycoremediation

By Tradd Cotter

What would it take to grow mushrooms in space? How can mushroom cultivation help us manage, or at least make use of, invasive species such as kudzu and water hyacinth and thereby reduce dependence on herbicides? Is it possible to develop a low-cost and easy-to-implement mushroom-growing kit that would provide high-quality edible protein and bioremediation in the wake of a natural disaster? How can we advance our understanding of morel cultivation so that growers stand a better chance of success?

For more than twenty years, mycology expert Tradd Cotter has been pondering these questions and conducting trials in search of the answers. In Organic Mushroom Farming and Mycoremediation, Cotter not only offers readers an in-depth exploration of best organic mushroom cultivation practices; he shares the results of his groundbreaking research and offers myriad ways to apply your cultivation skills and further incorporate mushrooms into your life—whether your goal is to help your community clean up industrial pollution or simply to settle down at the end of the day with a cold Reishi-infused homebrew ale.

The book first guides readers through an in-depth exploration of indoor and outdoor cultivation. Covered skills range from integrating wood-chip beds spawned with king stropharia into your garden and building a “trenched raft” of hardwood logs plugged with shiitake spawn to producing oysters indoors on spent coffee grounds in a 4×4 space or on pasteurized sawdust in vertical plastic columns. For those who aspire to the self-sufficiency gained by generating and expanding spawn rather than purchasing it, Cotter offers in-depth coverage of lab techniques, including low-cost alternatives that make use of existing infrastructure and materials.

Cotter also reports his groundbreaking research cultivating morels both indoors and out, “training” mycelium to respond to specific contaminants, and perpetuating spawn on cardboard without the use of electricity. Readers will discover information on making tinctures, powders, and mushroom-infused honey; making an antibacterial mushroom cutting board; and growing mushrooms on your old denim jeans.

Geared toward readers who want to grow mushrooms without the use of pesticides, Cotter takes “organic” one step further by introducing an entirely new way of thinking—one that looks at the potential to grow mushrooms on just about anything, just about anywhere, and by anyone.

Build Your Own Earth Oven

Build Your Own Earth Oven

By Kiko Denzer and Hannah Field

Earth ovens combine the utility of a wood-fired, retained-heat oven with the ease and timeless beauty of earthen construction. Building one will appeal to bakers, builders, and beginners of all kinds, from:

    •    the serious or aspiring baker who wants the best low-cost
bread oven, to
    •    gardeners who want a centerpiece for a beautiful
outdoor kitchen, to
    •    outdoor chefs, to
    •    creative people interested in low-cost materials and
simple technology, to
    •    teachers who want a multi-faceted, experiential project for students of all ages (the book has been successful  with
 everyone from third-graders to adults).

Build Your Own Earth Oven is fully illustrated with step-by-step directions, including how to tend the fire, and how to make perfect sourdough hearth loaves in the artisan tradition. The average do-it-yourselfer with a few tools and a scrap pile can build an oven for free, or close to it. Otherwise, $30 should cover all your materials--less than the price of a fancy "baking stone." Good building soil is often right in your back yard, under your feet. Build the simplest oven in a day! With a bit more time and imagination, you can make a permanent foundation and a fire-breathing dragon-oven or any other shape you can dream up.

Earth ovens are familiar to many that have seen a southwestern "horno" or a European "bee-hive" oven. The idea, pioneered by Egyptian bakers in the second millennium BCE, is simplicity itself: fill the oven with wood, light a fire, and let it burn down to ashes. The dense, 3- to 12-inch-thick earthen walls hold and store the heat of the fire, the baker sweeps the floor clean, and the hot oven walls radiate steady, intense heat for hours.

Home bakers who can't afford a fancy, steam-injected bread oven will be delighted to find that a simple earth oven can produce loaves to equal the fanciest "artisan" bakery. It also makes delicious roast meats, cakes, pies, pizzas, and other creations. Pizza cooks to perfection in three minutes or less. Vegetables, herbs, and potatoes drizzled with olive oil roast up in minutes for a simple, elegant, and delicious meal. Efficient cooks will find the residual heat useful for slow-baked dishes, and even for drying surplus produce, or incubating homemade yogurt.
