Fermentation, says author Sandor Katz, is about reclaiming our food. Applying the principles of mass production to our food has been a huge failure, in terms of the environmental destruction, the damage to our health, and the diminishment of economic security. If we want to turn the page away from destruction and toward sustainability, we have to take the reins ourselves.

Previously, we posted a six-and-a-half minute clip of this Sandor Katz interview. We now present the entire thing, in all its twenty-nine minute and twenty-nine second glory. Bon appetit!

One thing I can say for certain is that, you know, sustainability is not a spectator sport. Sustainability is not something you can buy as a consumer. If we want to create sustainability, sustainability means participation, and people have to become participants in creating better food choices for themselves and for other people in their communities. And so, you know, I think we have to break out of this infantilizing role of consumer, and, you know, more of us have to, you know, take on creating food for ourselves and for other people. I’m not preaching self-sufficiency, I’m preaching participation.
