When scientist Arpad Pusztai reported that genetically modified (GM) foods caused serious health problems in rats, he was a hero at his prestigious UK institute -- for two days. But after two phone calls (apparently) from the Prime Minister's office, he was fired, gagged, and mercilessly attacked. When UC Berkely professor Ignacio Chapela discovered GM corn contamination in Mexico, he too faced a firestorm of distortion and denial that left him struggling to salvage his career. Find out how the biotech industry "engineers" the truth and what they are trying to hide from you. By Bertram Verhaag, with bonus film: Monster Salmon.

By Eric Toensmeier

Imagine growing vegetables that require just about the same amount of care as perennial flowers and shrubs, need no annual tilling or planting, yet thrive and produce abundant and nutritious crops throughout the season.

In this DVD—a culmination of workshops recorded in Mexico, Florida, and Massachusetts—plant specialist Eric Toensmeier introduces gardeners to more than 100 species of little-known, underappreciated plants. Ranging beyond the usual suspects (asparagus, rhubarb, and artichoke) to include such delights as ground cherry, ramps, air potatoes, the fragrant spring tree, and the much-sought-after, antioxidant-rich wolfberry (also known as the goji berry), Toensmeier explains how to raise, tend, harvest, and cook with plants that yield great crops and culinary satisfaction. Toensmeier also takes viewers on a plant-by-plant tour of his garden in Massachusetts.

In Toensmeier's book, Perennial Vegetables (Chelsea Green, 2007), the adventurous gardener will find information, tips, and sound advice on less-common edibles that will make any garden a perpetual, low-maintenance source of food. In his book, readers will find perennial vegetables are perfect as part of an edible-landscape plan or permaculture garden. Profiling more than a hundred species, with dozens of color photographs and illustrations, and filled with valuable growing tips, recipes, and resources, Perennial Vegetables is a groundbreaking and ground-healing book that will open the eyes of gardeners everywhere to the exciting world of edible perennials.

The Sandor Katz Fermentation Set (Books & DVD Bundle)

The Sandor Katz Fermentation Set (Books & DVD Bundle)

By Sandor Ellix Katz

This set combines Sandor Ellix Katz's two classic books on fermentation with a DVD of one of his popular fermentation workshops.

Bread. Cheese. Wine. Beer. Coffee. Chocolate. Most people consume fermented foods and drinks every day. For thousands of years, humans have enjoyed the distinctive flavors and nutrition resulting from the transformative power of microscopic bacteria and fungi. Wild Fermentation: The Flavor, Nutrition, and Craft of Live-Culture Foods is the first cookbook to widely explore the culinary magic of fermentation, and is the perfect book to get you started on your own delicious ferments.

Once you've gotten excited about sauerkraut and enthused about homebrews, take your practice to the next level with Katz's latest book. The Art of Fermentation goes beyond recipes to teach the concepts and processes behind fermentation in ways that are simple enough to guide a reader through their first experience making sauerkraut or yogurt, and in-depth enough to provide greater understanding and insight for experienced practitioners. It is, quite simply, the most comprehensive guide to do-it-yourself home fermentation ever published.

Sandor Katz's enthusiasm comes through in his writing, but there's nothing like learning from a master in person. You might not be able to hop a plane to Tennessee for one of Katz's workshop, but the final piece of this fermentation bundle is the perfect substitute. In the Fermentation Workshop with Sandor Katz DVD, Katz offers fermentation beginners and enthusiasts a chance to “sit in” on one of his popular workshops and learn through hands-on demonstration and instruction, accompanied by an interview on the benefits of fermentation, and social implications as it relates to food security. The Man Who Planted Trees (Book & CD Bundle)

The Man Who Planted Trees (Book & CD Bundle)

By Jean Giono

Twenty years ago Chelsea Green published the first trade edition of The Man Who Planted Trees, a timeless eco-fable about what one person can do to restore the earth. The hero of the story, Elzéard Bouffier, spent his life planting one hundred acorns a day in a desolate, barren section of Provence in the south of France. The result was a total transformation of the landscape-from one devoid of life, with miserable, contentious inhabitants, to one filled with the scent of flowers, the songs of birds, and fresh, flowing water.

Since our first publication, the book has sold over a quarter of a million copies and inspired countless numbers of people around the world to take action and plant trees. On National Arbor Day, April 29, 2005, Chelsea Green released a special twentieth anniversary edition with a new foreword by Wangari Maathai, winner of the 2004 Nobel Peace Prize and founder of the African Green Belt Movement.

The Man Who Planted Trees CD, with Paul Winter consort

We have joined the Paul Winter Consort in the release of a CD version of the acclaimed audio of the story by Jean Giono. The original music was composed and is performed by the Paul Winter consort, and the text is narrated by Robert J. Lurtsema, host of "Morning Pro Musica."

Natural Beekeeping (Book & DVD Bundle)

Natural Beekeeping (Book & DVD Bundle)

By Ross Conrad

Today's beekeepers face unprecedented challenges, a fact that is now front-page news with the spread of "colony collapse disorder." Newly introduced pests like varroa and tracheal mites have made chemical treatment of hives standard practice, but pest resistance is building, which in turn creates demand for new and even more toxic chemicals. In fact, there is evidence that chemical treatments are making matters worse.

It's time for a new approach. In this set, which includes the new, full-color, Natural Beekeping, Revised and Expanded Edition, and a DVD workshop, Ross Conrad brings together the best "do no harm" strategies for keeping honeybees healthy and productive, all of which are covered in a thoughtful, matter-of-fact way.

About Natural Beekeeping, Revised and Expanded Edition:

Now revised and updated with new resources and including full-color photos throughout, Natural Beekeeping offers all the latest information in a book that has already proven invaluable for organic beekeepers. The new edition offers the same holistic, sensible alternative to conventional chemical practices with a program of natural hive management, but offers new sections on a wide range of subjects, including:

  • The basics of bee biology and anatomy;
  • Urban beekeeping;
  • Identifying and working with queens;
  • Parasitic mite control; and
  • Hive diseases.

Also, a completely new chapter on marketing provides valuable advice for anyone who intends to sell a wide range of hive products.

Natural Beekeeping covers nontoxic methods of controlling mites; eliminating American foulbrood disease without the use of antibiotics; selective breeding for naturally resistant bees; and many other detailed management techniques, which are covered in a thoughtful, matter-of-fact way.

Whether you are a novice looking to get started with bees, an experienced apiculturist looking for ideas to develop an integrated pest-management approach, or someone who wants to sell honey at a premium price, this is the book you've been waiting for.

About Natural Beekeeping with Ross Conrad (DVD):

In this filmed workshop, Ross Conrad flips the script on traditional approaches by proposing a program of selective breeding and natural hive management. The video presents a comprehensive survey of natural beekeeping methods and challenges, including segments filmed in thefield. It offers practical information that every aspiring beekeeper needs to know—everything from basic hive equipment to working with your bees to harvesting and processing honey.
