Eating genetically modified food is gambling with every bite.

The biotech industry's claim that genetically modified (GM) foods are safe is shattered in this groundbreaking book. Sixty-five health risks of the foods that Americans eat every day are presented in easy-to-read two-page spreads. The left page is designed for the quick scanning reader; it includes bullets, illustrations, and quotes. The right side offers fully referenced text, describing both research studies and theoretical risks. The second half of Genetic Roulette shows how safety assessments on GM crops are not competent to identify the health problems presented in the first half. It also exposes how industry research is rigged to avoid finding problems.

This book, prepared in with input by more than 30 scientists, is for anyone wanting to understand GM technology, to learn how to protect themselves, or to share their concerns with others. It is presented in the clear, accessible style that made Jeffrey Smith's Seeds of Deception the world's best-selling book on genetically engineered foods. As the world's most complete reference on the health risks of GM foods, Genetic Roulette is also ideal for schools and libraries.

REVIEWS AND PRAISE

"When I worked at Monsanto, I warned both scientists and executives that our GM foods may cause disease, but no one was even willing to listen, let alone investigate the unpredicted side effects. For them, it was all about profit. Now our whole population is threatened by the serious dangers described in Genetic Roulette."--Kirk J. Azevedo, DC

"Congratulations, Jeffrey Smith, for your courage. Thanks to your tireless investigations, we need wonder no longer why corporations spreading GMOs are so secretive, why they've spent hundreds of millions to keep us from even knowing which foods contain GMOs. They don't want us to examine the shoddy science, the suppressed evidence, and, most of all, the real health risks that GMOs present. Read Genetic Roulette not only to protect yourself and your family but to learn through this breath-taking story what all Americans need to do to reclaim our democracy and protect our planet."-- Frances Moore Lappé, author of Democracy's Edge and Diet for a Small Planet

"I used to test for soy allergies all the time, but now that soy is genetically engineered, it is so dangerous that I tell people never to eat it--unless it says organic. Genetic Roulette tells you why you must avoid genetically engineered foods to stay healthy."--John H. Boyles, MD, ear, nose, and throat, and allergy specialist

"Jeffrey Smith is the leading world expert in the understanding and communication of the health issues surrounding genetically modified foods. Genetic Roulette, which brings in original contributions by eminent scientists worldwide, makes it crystal clear that the American FDA should not be so cavalier about the potential dangers of these procedures."--Candace Pert, PhD, author of Molecules of Emotion and Everything You Need to Know to Feel Go(o)d and former Chief of the Section, National Institutes of Health

"The most comprehensive, well-documented, and highly readable exposé on the serious health dangers of GM foods."--Samuel S. Epstein, MD, professor emeritus of Environmental Medicine, University of Illinois at Chicago School of Public Health and chairman, Cancer Prevention Coalition

Never-before-seen evidence points to genetically engineered foods as a major contributor to rising disease rates in the U.S. population, especially among children. Gastrointestinal disorders, allergies, inflammatory diseases, and infertility are just some of the problems identified in humans, pets. livestock, and lab animals that eat genetically modified soybeans and corn.

Monsanto's strong-arm tactics, the FDA's fraudulent policies, and how the USDA ignores a growing health emergency are also laid bare. This sometimes shocking film may change your diet, help you protect your family, and accelerate the consumer tipping point against genetically modified organisms (GMOs). A film not to be missed.

Also includes the bonus DVD Seeds of Freedom (28 min.) narrated by Jeremy Irons, and produced by the Gaia Foundation and African Biodiversity Network. This landmark film shows how the story of seed at the hands of multinationals has become one of loss, control, dependence, and debt. Also: two talks by Jeffrey M. Smith and twelve public-service announcements.

Seeds of Deception

Seeds of Deception

By Jeffrey M. Smith

Without knowing it, Americans eat genetically modified (GM) food everyday. While the food and chemical industries claim that GMO food is safe, a considerable amount of evidence shows otherwise. In Seeds of Deception, Jeffrey Smith, a former executive with the leading independent laboratory testing for GM presence in foods, documents these serious health dangers and explains how corporate influence and government collusion have been used to cover them up.

The stories Smith presents read like a mystery novel. Scientists are offered bribes or threatened; evidence is stolen; data withheld or distorted. Government scientists who complain are stripped of responsibilities or fired. The FDA even withheld information from congress after a GM food supplement killed nearly a hundred people and permanently disabled thousands. While Smith was employed by the laboratory he was not allowed to speak on the health dangers or the cover-up. No longer bound by this agreement, Smith now reveals what he knows in this groundbreaking exposé.

Today, food companies sell GM foods that have not undergone safety studies. FDA scientists opposed this, but White House and industry pressure prevailed and the agency's final policy--co-authored by a former Monsanto attorney--denied the risks. The scientists' concerns were made public only after a lawsuit forced the agency to turn over internal documents.

Dan Glickman, former Secretary of Agriculture, describes the government's pro-biotech mindset: "You felt like you were almost an alien, disloyal, by trying to present an open-minded view. . . . So I pretty much spouted the rhetoric. . . . It was written into my speeches."

In Seeds of Deception Smith offers easy-to-understand descriptions of genetic engineering and explains why it can result in serious health problems. This well-documented, pivotal work will show you how to protect yourself and your family.

In each cup of coffee we drink the major issues of the twenty-first century-globalization, immigration, women's rights, pollution, indigenous rights, and self-determination-are played out in villages and remote areas around the world. In Javatrekker: Dispatches from the World of Fair Trade Coffee, a unique hybrid of Fair Trade business, adventure travel, and cultural anthropology, author Dean Cycon brings readers face-to-face with the real people who make our morning coffee ritual possible.

Second only to oil in terms of its value, the coffee trade is complex with several levels of middlemen removing the 28 million growers in fifty distant countries far from you and your morning cup. And, according to Cycon, 99 percent of the people involved in the coffee economy have never been to a coffee village. They let advertising and images from the major coffee companies create their worldview.

Cycon changes that in this compelling book, taking the reader on a tour of ten countries in nine chapters through his passionate eye and unique perspective. Cycon, who is himself an amalgam-equal parts entrepreneur, activist, and mischievous explorer-has traveled extensively throughout the world's tropical coffeelands, and shows readers places and people that few if any outsiders have ever seen. Along the way, readers come to realize the promise and hope offered by sustainable business principles and the products derived from cooperation, fair pricing, and profit sharing.

Cycon introduces us to the Mamos of Colombia-holy men who believe they are literally holding the world together-despite the severe effects of climate change caused by us, their "younger brothers." He takes us on a trip through an ancient forest in Ethiopia where many believe that coffee was first discovered 1,500 years ago by the goatherd Kaldi and his animals. And readers learn of Mexico's infamous Death Train, which transported countless immigrants from Central America northward to the U.S. border, but took a horrifying toll in lost lives and limbs.
Rich with stories of people, landscapes, and customs, Javatrekker offers a deep appreciation and understanding of the global trade and culture of coffee.

In each cup of coffee we drink the major issues of the twenty-first century-globalization, immigration, women's rights, pollution, indigenous rights, and self-determination-are played out in villages and remote areas around the world.

What is Fair Trade Coffee?
Coffee prices paid to the farmer are based on the international commodity price for coffee (the "C" price) and the quality premium each farmer negotiates. Fair Trade provides an internationally determined minimum floor price when the C plus premium sinks below $1.26 per pound for conventional and $1.41 for organics (that's us!). As important as price, Fair Trade works with small farmers to create democratic cooperatives that insure fair dealing, accountability and transparency in trade transactions. In an industry where the farmer is traditionally ripped off by a host of middlemen, this is tremendously important.

Cooperatives are examined by the Fairtrade Labeling Organization (FLO), or the International Fair Trade Association (IFAT), European NGOs, for democratic process and transparency. Those that pass are listed on the FLO Registry or become IFAT members. Cooperatives provide important resources and organization to small farmers in the form of technical assistance for crop and harvest improvement, efficiencies in processing and shipping, strength in negotiation and an array of needed social services, such as health care and credit. Fair Trade also requires pre-financing of up to sixty percent of the value of the contract, if the farmers ask for it. Several groups, such as Ecologic and Green Development Fund have created funds for pre-finance lending.

GMO Myths and Truths

GMO Myths and Truths

By Claire Robinson and Michael Antoniou and John Fagan

It is often claimed that the case against genetically modified (GM) crops and foods is based on emotion, not science, and that to oppose GM crop and food technology is to be anti-science. It is also claimed that GM crops offer higher yields and better nutrition, that they are safe for health and the environment, that they reduce agrochemical use, and that they are needed to feed the world’s growing population. This book, co-authored by two genetic engineers and a writer/researcher, exposes these claims as false, using scientific and other documented evidence. GMO Myths and Truths summarizes the facts on the safety and efficacy of genetically modified (GM) crops and foods in terms that are accessible to the non-scientist but still relevant to scientists, policymakers and educators. The evidence presented points to many hazards, risks, and limitations of genetic engineering technology. These include harms found in animal feeding and ecological studies, which in turn indicate risks to health and the environment posed by GM crops and foods.

The layout of the book enables those readers with limited time to read the chapter summaries, while providing more detail and full references for those who require them. At 164 pages of paperback size, this new condensed version is shorter and more accessible than the authors’ 330-page report by the same name, which has been downloaded over half a million times.

The book shows that conventional breeding continues to outstrip GM in developing crops that deliver high yields, better nutrition, and tolerance to extreme weather conditions and poor soils. In agreement with over 400 international experts who co-authored a UN and World Bank-sponsored report on the future of farming, the authors conclude that modern agroecology, rather than GM, is the best path for feeding the world’s current and future populations in a safe and sustainable way.

Black Trumpet

Black Trumpet

By Evan Mallett

Featuring more than 250 innovative recipes that respect and transcend regional food traditions.

The basis of great cooking has always been the creative use of fresh, seasonal ingredients – whether the kitchen is at home or in a high-end restaurant.

At the renowned Black Trumpet restaurant, located in the historic seacoast city of Portsmouth, New Hampshire, Chef Evan Mallett and his staff reflect the constantly changing seasons of New England, celebrating the unique flavors and traditions of fished, farmed, and foraged foods in their ever-changing menus that rotate roughly every six weeks throughout the course of the year.

From deep winter’s comfort dishes to the first run of maple syrup during Mud Season; from the first flush of greens in early spring to the embarrassment of high summer’s bounty and fall’s final harvest—Evan Mallett offers more than 250 innovative recipes that draw not only on classic regional foodways, but on the author’s personal experiences with Mexican, Mediterranean, and other classic world cuisines. Recipes include inspired and delicious dishes such as:

  • Quail Adobado with Quince Hash;
  • Scallops with Couscous and Cider Cream;
  • Lobster and Kelp Tamales; and
  • Cauliflower and Chickpea Fritter with Curried Spinach Puree; as well as a wide range of soups, salads, starters, condiments, desserts, and cocktails.

Black Trumpet not only tells the story of a great restaurant—how the Black Trumpet became nationally famous as a model for local food sourcing and community involvement—but it also traces the growth and evolution of the local food movement. In some ways, it can be viewed as a how-to manual for building a community around good food, featuring not only creative and delicious recipes, but autobiographical vignettes, and sidebars containing technical how-to information, profiles, anecdotes, and essays.

In this cookbook, the trappings of technology are eschewed, and the bare-bones essentials of extracting flavor and combining both commonplace and unusual ingredients take center stage. Genuine flavor and hospitality are what set Black Trumpet apart, and this cookbook will reflect those special qualities and inspire a new generation of adventurous American cooks.

Wild Fermentation

Wild Fermentation

By Sandor Ellix Katz

The Book That Started the Fermentation Revolution

Sandor Ellix Katz, winner of a James Beard Award and New York Times bestselling author, whom Michael Pollan calls the “Johnny Appleseed of Fermentation” returns to the iconic book that started it all, but with a fresh perspective, renewed enthusiasm, and expanded wisdom from his travels around the world. This self-described fermentation revivalist is perhaps best known simply as Sandorkraut, which describes his joyful and demystifying approach to making and eating fermented foods, the health benefits of which have helped launch a nutrition-based food revolution.

Since its publication in 2003, and aided by Katz’s engaging and fervent workshop presentations, Wild Fermentation has inspired people to turn their kitchens into food labs: fermenting vegetables into sauerkraut, milk into cheese or yogurt, grains into sourdough bread, and much more. In turn, they’ve traded batches, shared recipes, and joined thousands of others on a journey of creating healthy food for themselves, their families, and their communities. Katz’s work earned him the Craig Clairborne lifetime achievement award from the Southern Foodways Alliance, and has been called “one of the unlikely rock stars of the American food scene” by The New York Times.

This updated and revised edition, now with full color photos throughout, is sure to introduce a whole new generation to the flavors and health benefits of fermented foods. It features many brand-new recipes—including Strawberry Kvass, African Sorghum Beer, and Infinite Buckwheat Bread—and updates and refines original recipes reflecting the author’s ever-deepening knowledge of global food traditions that has influenced four-star chefs and home cooks alike. For Katz, his gateway to fermentation was sauerkraut. So open this book to find yours, and start a little food revolution right in your own kitchen.

Praise for Sandor Ellix Katz and his books:

The Art of Fermentation is an extraordinary book, and an impressive work of passion and scholarship.”—Deborah Madison, author of Local Flavors

“Sandor Katz has proven himself to be the king of fermentation.”—Sally Fallon Morell, President, The Weston A. Price Foundation
